  • 1 large banana, peeled and sliced
  • 4 oz. (125g) marshmallows, chopped
  • 1 oz. (25g) dark cooking chocolate, grated
  • 8 thick slices raisin bread, buttered
  • Cooking Instructions:

    1. Mix the banana, marshmallows and chocolate together
    2. Put two slices of the bread, butter side down into a pre-heated sandwich maker
    3. Place half of the filling on each of the two bread slices
    4. Top with the two more slices of bread, butter side uppermost
    5. Close the lid and cook for 2 minutes
    6. Repeat for the other two sandwiches

    Beautiful banana cream pudding with lemon and honey flavour


  • 3 large bananas, mashed
  • 2 tablespoons lemon juice
  • 10 fl. oz. (300ml) milk
  • 1 tablespoon gelatine
  • 2 teaspoons (10ml) finely chopped lemon rind
  • 3 tablespoons clear honey
  • 1 tablespoon gelatine dissolved in 2 tablespoons of hot water
  • 10 fl. oz. double cream, stiffly whipped
  • 5 fl. oz. (150ml) water
  • Cooking Instructions:

    1. Mix together the bananas and lemon juice
    2. Put the milk and honey in a saucepan and heat, stirring continuously until they are blended
    3. Beat into the bananas, with the water and lemon rind
    4. Stir in the gelatine
    5. Pour into a serving bowl and leave until the mixture stiffens slightly, then fold in the cream

  • 3 ripe bananas, mashed
  • 3 tabelspoons cater sugar
  • 2 tablespoons dry white wine
  • 1 tablespoon brandy
  • 10 fl. oz. (300ml) double cream, stiffly whipped
  • 2 tablespoons lemon juice
  • 3 tablespoons castor sugar
  • 1 egg white, stiffly beaten
  • Cooking Instructions:

    1. Mix together the bananas, castor sugar, wine, brandy and lemon juice
    2. Fold in the cream, then the egg white
    3. Spoon into serving bowls, then chill for 30 minutes before serving

  • 4 oz. (125g) almonds, chopped
  • 2 bananas, mashed
  • 2 eggs
  • 4 oz. (125g) molasses sugar
  • 2 teaspoons baking powder
  • 4 oz. (125g) wholemeal flour
  • 4 oz. (125g) polyunsaturated margarine
  • Cooking Instructions:

    1. Pre-heat oven to 375F, Gas Mark 5, 190C
    2. Cream the margarine and sugar together until light and fluffy
    3. Beat in the eggs, one at a time, adding a tablespoon of flour with the second egg
    4. Fold in the remaining flour and baking powder with the bananas
    5. Line a greased 8 inch (20 cm) square shallow tin
    6. Spread the mixture evenly in the tin and sprinkle with the almonds
    7. Bake in the pre-heated oven for 25 minutes or until the cake springs back when lightly pressed
    8. Leave in the tin for 2 minutes then cut into 16 slices
    9. Transfer to a wire rack to cool

  • 2 bananas, peeled and mashed
  • 8 oz. Raisins
  • one and a half pounds self-raising flour
  • 6 oz. Soft dark brown sugar
  • 2 level tbsps. Ovaltine
  • 2 level tbsps. Black treacle
  • 1 pint milk
  • 2 level tbsps. malt extract
  • 6 oz. butter
  • half a level teaspoon of salt
  • Cooking Instructions:

    1. Grease and line 3 x 1 lb. loaf tins
    2. Pre-heat oven to 325F, Gas Mark 3, 160C
    3. Put the milk, butter, raisins, sugar, Ovaltine, treacle and malt extract into a large saucepan
    4. Heat slowly until the butter has melted then allow to cool
    5. Add the bananas, sifted flour and salt, then divide the mixture between the 3 tins
    6. Bake in the center of the oven for one and a quarter hours
    7. Cool in the tins for 5 minutes before turning on to a wire rack to finish cooling

  • 2 firm bananas, peeled
  • 2 tbsps. brown sugar
  • good pinch of cinnamon
  • 2 tsps. Butter
  • lemon juice
  • Cooking Instructions:

    1. Place the bananas on a double thickness of aluminum foil and brush with lemon juice
    2. Sprinkle the brown sugar over the bananas and dust with cinnamon
    3. Dot with butter and wrap the edges of the foil tightly
    4. Barbecue on the grill for about 8 minutes over a medium heat

  • 4 Bananas, peeled and sliced lengthways
  • juice of 2 lemons
  • 1 oz. (25g) butter, cut into small pieces
  • 2 oz. (50g) brown sugar
  • 2 fl. oz. (50ml.) rum
  • Cooking Instructions:

    1. Pre-heat oven to 350F, Gas Mark 4, 180C
    2. Put the bananas in a shallow ovenproof dish
    3. Dot over the butter and sprinkle over the sugar and lemon juice
    4. Bake for 20 minutes in pre-heated oven, basting occasionally
    5. Heat the rum until hot but not boiling, pour over the bananas and ignite
    6. Serve as soon as the flames die away

  • Two and a quarter pounds (1 Kg.) bananas, peeled
  • 7 oz. (200g) pineapple juice
  • juice of 2 lemons
  • 1 Kg. Bag of sugar with wild pectin
  • Cooking Instructions:

    1. Place half the peeled bananas in a large saucepan and mash roughly with a potato masher
    2. Slice the remaining bananas and add to the pan
    3. Stir in the lemon and pineapple juices
    4. Add the sugar with pectin and heat gently until the sugar dissolves
    5. Bring to the boil for 3-4 minutes then allow to cool a little before pouring into warm, dry jars
    6. Cover and seal when cold

  • Firm bananas , peeled, halved lenghways and halved again across
  • 2 oz. Flour
  • 1 egg
  • one eighth pint warm water
  • 1 dessertsponful salad oil
  • pinch of salt
  • caster sugar
  • oil or fat for frying
  • Cooking Instructions:

    1. Sieve the flour and salt into a bowl and make a well in the middle
    2. Mix in the egg yolk, warm water and the oil to form a batter
    3. Beat until light then stand in a cool place for an hour
    4. Add the very stiffly beaten white of the egg just before the batter is needed
    5. Drop each piece of banana in the batter then put into hot fat or oil until lightly browned
    6. Sprinkle with caster sugar and serve
