Banana and Almond Slices
Makes 16 Slices
Description/Notes:
Enjoy these tasty fruit slices without worrying too much about putting on weight
Ingredients:
4 oz. (125g) almonds, chopped 2 bananas, mashed 2 eggs 4 oz. (125g) molasses sugar 2 teaspoons baking powder 4 oz. (125g) wholemeal flour 4 oz. (125g) polyunsaturated margarine
Cooking Instructions:
- Pre-heat oven to 375F, Gas Mark 5, 190C
- Cream the margarine and sugar together until light and fluffy
- Beat in the eggs, one at a time, adding a tablespoon of flour with the second egg
- Fold in the remaining flour and baking powder with the bananas
- Line a greased 8 inch (20 cm) square shallow tin
- Spread the mixture evenly in the tin and sprinkle with the almonds
- Bake in the pre-heated oven for 25 minutes or until the cake springs back when lightly pressed
- Leave in the tin for 2 minutes then cut into 16 slices
- Transfer to a wire rack to cool
