Honeyed Banana Dream

Serves 4

Description/Notes:

Beautiful banana cream pudding with lemon and honey flavour

Ingredients:

3 large bananas, mashed

2 tablespoons lemon juice

10 fl. oz. (300ml) milk

1 tablespoon gelatine

2 teaspoons (10ml) finely chopped lemon rind

3 tablespoons clear honey

1 tablespoon gelatine dissolved in 2 tablespoons of hot water

10 fl. oz. double cream, stiffly whipped

5 fl. oz. (150ml) water

Cooking Instructions:

Mix together the bananas and lemon juice
Put the milk and honey in a saucepan and heat, stirring continuously until they are blended
Beat into the bananas, with the water and lemon rind
Stir in the gelatine
Pour into a serving bowl and leave until the mixture stiffens slightly, then fold in the cream
