Banana Fruit Teabread
Makes 1 x 2lb. (1kg) loaf
Description/Notes:
This wonderfully moist teabread is delicious when spread with butter and honey
Ingredients:
2 ripe bananas, peeled and mashed 3 oz. (85g0 walnut pieces, roughly chopped 2 oz. (60g) butter or margarine one and a half teaspoons baking powder grated rind of 1 orange half a teaspoon bicarbonate of soda quarter pint (140 ml) orange juice 1 egg, size 3, beaten 4 oz. (110g) demerara sugar half a teaspoon margarine 8 0z. (225g) white or wholemeal plain flour
Cooking Instructions:
- Grease and line the base of a 2 lb. (0.9kg) loaf-tin
- Pre-heat the oven to 350F, Gas Mark 4, 180C
- Sift the flour, baking powder and bicarbonate of soda into a mixing bowl
- Rub in the butter and stir in the sugar and orange rind
- Add the remaining ingredients and mix well
- Spoon the mixture into the loaf tin and level the surface
- Bake in the pre-heated oven for one to one and a quarter hours or until well risen and firm to the touch
- Turn out onto a wire rack and allow to cool
- Wrap and store for at least a day before cutting
