Betty Cakes
Description/Notes:
If you'r nutty about cakes, or Betty, then these almond and hazelnut fancies are definitely for you
Ingredients:
6 oz. (150g) castor sugar 2 oz. (50g) ground rice 2 oz. (50g) ground almonds whites of 3 eggs 2 oz. (50g) ground hazlenuts half a teaspoon of baking powder
Cooking Instructions:
- Pre-heat the oven to 325F, Gas Mark 3, 170C
- Beat the white of the eggs till they are stiff
- Fold in the remaining ingredients which have been sieved together
- Put in a forcing bak with a narrow tube and squeeze out into flat circles on to a greased baking tin
- Place in the pre-heated oven and bake for 15-20 minutes
- When cool trim with a round cutter, stick two together with butter cream, spread butter cream over the top and coat with finely chopped almonds
