Beautiful banana cream pudding with lemon and honey flavour


  • 3 large bananas, mashed
  • 2 tablespoons lemon juice
  • 10 fl. oz. (300ml) milk
  • 1 tablespoon gelatine
  • 2 teaspoons (10ml) finely chopped lemon rind
  • 3 tablespoons clear honey
  • 1 tablespoon gelatine dissolved in 2 tablespoons of hot water
  • 10 fl. oz. double cream, stiffly whipped
  • 5 fl. oz. (150ml) water
  • Cooking Instructions:

    1. Mix together the bananas and lemon juice
    2. Put the milk and honey in a saucepan and heat, stirring continuously until they are blended
    3. Beat into the bananas, with the water and lemon rind
    4. Stir in the gelatine
    5. Pour into a serving bowl and leave until the mixture stiffens slightly, then fold in the cream

    A tasty appetizer that you can nibble on as you walk around the garden on a warm summer evening.


  • 4 Corn Cobs
  • 2oz. (50g) butter
  • 4 sprigs parsley
  • 4 sprigs rosemary
  • salt and pepper
  • Cooking Instructions:

    1. Prepare the corn by removing the outside leaves and silky threads
    2. Cut off the stems close to the corn kernels
    3. Cut 4 pieces of foil sufficient to wrap around the corn and place one corn cob on each one
    4. Add a knob of butter and season with salt and pepper
    5. Place a sprig of parsley and rosemary by each corn and wrap the foil around them
    6. Put them under a hot grill or on a hot barbecue for 10 minutes turning every couple of minutes
    7. Place a cocktail stick or corn holder in each end and serve

  • 1 large banana, peeled and sliced
  • 4 oz. (125g) marshmallows, chopped
  • 1 oz. (25g) dark cooking chocolate, grated
  • 8 thick slices raisin bread, buttered
  • Cooking Instructions:

    1. Mix the banana, marshmallows and chocolate together
    2. Put two slices of the bread, butter side down into a pre-heated sandwich maker
    3. Place half of the filling on each of the two bread slices
    4. Top with the two more slices of bread, butter side uppermost
    5. Close the lid and cook for 2 minutes
    6. Repeat for the other two sandwiches

  • 1lb. (500g) unripe cherries
  • 1tsp. arrowroot
  • 1 tsp. mixed spice
  • 2oz. (50g) lump sugar
  • 1tbsp. lemon juice
  • Cooking Instructions:

    1. Rinse the cherries and remove the stalks
    2. Toss the cherries in arrowroot then put them in a foil dish with a quarter pint (125ml) cold water, lemon juice and mixed spice
    3. Simmer the cherries until tender, stirring occasionally
    4. Crush the lump sugar and sprinkle over the cherries when they are ready to be served

  • 4-6 bananas, cut into thin rings
  • juice of half a lemon
  • one to one and a half tablespoons of sugar
  • flaky pastry, sufficient to cover pie-dish
  • Cooking Instructions:

    1. Fill a greased pie-dish with the bananas
    2. Add the lemon juice and sugar
    3. Top with flaky pastry and bake until browned

  • 4 bananas
  • 4 portions of ice cream
  • 4 tbsp raspberry jam
  • 1 oz. shelled walnuts
  • Cooking Instructions:

    1. Peel the bananas and cut in half lengthwise
    2. Chop the nuts and sieve the jam
    3. Place a portion of ice cream in four sweet dishes and arrange the banana pieces at either side
    4. Pour the jam over and sprinkle with the chopped nuts

    Not just a pudding but a delicious snack or supper dish


  • 2 large bananas, mashed to a puree
  • 3 tbsp. double cream
  • 4 oz. (100g) plain flour
  • 1 oz. (25g) brown sugar
  • 2 oz. (50g) hazelnuts, crushed
  • 1 large egg
  • quarter pint (125ml) milk
  • 2 oz. (50g) lard
  • pinch of salt
  • Cooking Instructions:

    1. Mix the bananas with the double cream and sugar
    2. Toast the nuts lightly under the grill, turning all the time
    3. Allow to cool then blend in with the banana mixture
    4. Sift the flour and salt into a bowl then make a well in the center and add the egg
    5. Mix to a smooth batter with the milk and gradually whisk in a quarter pint (125ml) cold water
    6. Melt a quarter ounce (7g) knob of lard in a small frying pan and when hot pour in a little of the batter
    7. Cook for about one minute until golden on the bottom then toss and cook for another minute
    8. Repeat this process until you have made seven more pancakes
    9. Fold the pancakes into quarters and spoon some of the banana nut filling into the pockets
    10. Serve immediately

  • 4 bananas
  • 8 oz. (225g) rolled oats
  • 8 oz. (225g) wholemeal flour
  • 8 oz. (225g) sugar
  • 8 oz. (225g) butter
  • half a tsp. bicarbonate of soda
  • 2 eggs
  • Cooking Instructions:

    1. Mix together the rolled oats, sugar, wholemeal flour, butter and bicarbonate of soda
    2. Blend in 2 eggs and mix to a stiff dough
    3. Divide into 2 portions and place one portion in the bottom of a greased 9 inch shallow square baking tin
    4. Slice the bananas on to this, then put the other half of the mixture on top
    5. Bake a golden brown and cut into fingers
