Chicken Tacos
Serves 4
Description/Notes:
Spicy chicken in a sizzling Mexican sauce, hot stuff
Ingredients:
12oz. (350g) cooked chicken meat, diced 1 medium onion, peeled and chopped 3 tomatoes, skinned and chopped 4 taco shells quarter iceberg lettuce, shredded 3 oz. (75g) Cheddar cheese, grated three-quarter ounce (20g) butter Tabasco sauce salt and ground black pepper
Cooking Instructions:
- Pre-heat the oven to 300F, Gas Mark 2, 150C
- Place the taco shells in the oven for 2-3 minutes or until warmed through
- Melt the butter in a frying pan, add the chopped onion and fry for 5 minutes
- Stir in the diced chicken meat and half of the tomatoes
- Season to taste with salt and pepper then heat through for 5 minutes
- Spoon the filling into taco shells and add the tomatoes, lettuce, cheese and Tabasco sauce
- Garnish with parsley and serve
