Luscious chicken portions with a tangy lemon glaze
Ingredients:
seasoned flour
6 chicken portions
3 oz. (75g) butter
half a level teaspoon salt
parsley
3 tablespoons of oil
3 tablespoons lemon juice
2 level tablespoons finely chopped onions
1 level teaspoon black pepper
pinch of dried thyme
Cooking Instructions:
Wipe the chicken portions and toss in the seasoned flour
Melt the butter in a shallow baking dish which will take the chicken portions without overlapping
Place the chicken portions skin-side down in the fat and cook just above the center of a moderate oven (350F, Gas Mark 4, 180C) for 25 minutes then turn and cook for a further 25 minutes
Blend together all the other ingredients for the glaze
Spoon the glaze over the chicken and continue to cook for a further 15 minutes, basting once during this time
Test the chicken to make sure the flesh is tender
Serve with a little of the glaze and a garnish of parsley
