Recipe: Caribbean Fruit Curry

Description/Notes:

Exotic spices and Caribbean fruit make this curry a real Tropical treat

Ingredients:

  • 2 large bananas, peeled and sliced
  • 1 medium onion, skinned and finely chopped
  • 4 oz. (125g) tomato, skinned and sliced
  • 8 oz. (225g) cooking apples, cut in wedges
  • 2 oz. (50g) sultanas
  • 1 cardamom seed, husk removed
  • half a piece of fresh ginger, chopped
  • 1 bay leaf
  • 1 clove
  • 2 tbsps. oil
  • 1 oz. 925g) butter
  • grated rind and juice of 1 lemon
  • 1 tsp. salt
  • 2 oz. (50g) cashew nuts
  • 1 tbsp. cumin seed
  • 1 tbsp. turmeric
  • Cooking Instructions:

    1. Gently heat the butter and oil in a heavy based pan, add the bay leaf all the spices and cook gently for 5 minutes
    2. Add the onion and tomato to the pan, stir then cover and cook for another 5 minutes
    3. Add all the remaining ingredients, cover and cook gently until the fruit is just soft
    4. Transfer to a warmed dish and serve with rice and poppadums
