Recipe: Mustard Herrings

Description/Notes:

Luscious herrings in a tasty wine and mustard sauce

Ingredients:

  • 4 medium herrings, cleaned, boned
  • 1 small onion, finely chopped
  • 1 x 80g pkt. cider apple stuffing mix
  • 6 tablespoons of hot water
  • three quarters of a pint (425ml) milk
  • one and a half tablespoons of plain flour
  • 1 tablespoon of mustard powder
  • 1 tablespoon of white wine vinegar
  • one and a half ounces (40g) butter
  • salt and ground black pepper
  • sprigs of parsley and lemon slices ,for garnish
  • Cooking Instructions:

    1. Place onion in a bowl and cook on full power for one and a half minutes
    2. Stir in the stuffing and water to bind
    3. Divide the stuffing between the herrings and arrange in a shallow dish
    4. Cook on full power for 5-6 minutes, re-arranging half way through cooking
    5. Set aside, covered
    6. Pour the milk into a jug, whisk in the flour, mustard, vinegar and seasoning
    7. Add the butter and cook, uncovered , on full power for 4 minutes, whisking 3 times until thick
    8. Serve garnished with lemon and parsley and serve sauce separately
