Recipe: Prawns in Brandy

Description/Notes:

A saucy dish of prawns in white wine brandy and cream, tell your guests to leave the car at home and come by taxi!

Ingredients:

  • 1 lb. (450g) prawns, peeled
  • 1 oz. (25g) butter
  • half a level teaspoon of curry powder
  • 2 level teaspoons of flour
  • 2 tablespoons of brandy
  • 4 tablespoons of white wine
  • 1 level teaspoon tomato puree
  • quarter pint (150ml) double cream
  • salt and pepper
  • pinch of nutmeg
  • Cooking Instructions:

    1. Melt the butter in a heavy-based frying pan
    2. Stir in the prawns, then stir in the curry powder and fry gently for 2 minutes, stirring all the time
    3. Stir in the flour and cook for one more minute
    4. Add the brandy, white wine and tomato puree to the pan then simmer for 2 minutes
    5. Reduce the heat to low and quickly stir in the double cream
    6. Season with salt and pepper and sprinkle with nutmeg
    7. Serve piping hot with plain boiled rice
