Herby Cod Surprise
Serves 4
Description/Notes:
Delicious cod dish that would taste good with a jacket potato
Ingredients:
4 pieces of cod fillet, about 5oz. (150g) each 1 medium onion, skinned and chopped 2 level tablespoons tomato puree 1 level tablespoon of chopped parsley 1 oz. (25g) butter 4 fl. oz. (100ml) water salt and pepper half a level teaspoon of dried mixed herbs
Cooking Instructions:
- Melt the butter in a saucepan and fry the onion gently for about 3 minutes to soften it
- Mix in the water, tomato puree and mixed herbs
- Season with salt and pepper to taste, stir and bring to the boil
- Place the cod fillets in the pan on top of the onion mixture
- Cover the pan with a lid and simmer for about 20 minutes, until fish is tender
- Scatter parsley on top and serve
