Cod Casserole
Description/Notes:
A super supper casserole of cod fillets in an unusual egg andd cheese sauce
Ingredients:
one and a half pounds (675g) cod fillets 1 small onion 1 bay leaf 1-2 cloves salt 2 oz. (50g) margarine 2 oz. (50g) flour half a pint of milk 1 tablespoon parsley, chopped 2 0z. (50g) cheese, grated 2 hard-boiled eggs 3 tomatoes fresh choped parsley, for garnish
Cooking Instructions:
- Place the fihs in the pan with the onion stuck with cloves, bay leaf and salt
- Cover with water and cook gently until tender
- Remove the cod, extract any skin and bones and cut fish into large pieces
- Melt the margarine in a pan, stir in the flour and add the milk and the strained fish liquor to make a smooth sauce
- Add the parsley, cheese, chopped hard-boiled egg and seasoniong
- Grease a deep casserole
- Arrange layers of fish and sauce, ending with a layer of sauce
- Decorate the top with quartered tomatoes and bake in pre-heated oven (425F, Gas Mark 7,
210C) for 10-15 minutes
- garnish with the finely chopped fresh parsley
