Recipe: Brandy Sugar Biscuits (Kourambiethes)

Description/Notes:

These traditional Christmas sweets with their marvelous flavor of cinnamon, brandy and roasted almonds are prepared all over Greece for the Christmas festivities

Ingredients:

  • 3 cups of flour
  • half a cup of caster sugar
  • 1 cup of coarsely ground roast almonds
  • 1 tbsp. ground cinnamon
  • 1 whole egg and the yolk of and egg
  • 2 cups of olive oil
  • 4 tbsps of brandy
  • 2-3 cups of icing sugar(for coating)
  • Cooking Instructions:

    1. Pre-heat the oven to 350F, Gas Mark 4, 180 C
    2. Put the sugar and olive oil into a bowl and beat thoroughly
    3. Add the almonds, cinnamon, eggs and brandy, then slowly beat in the flour until the mixture turns into a soft dough that does not stick to your hands
    4. Divide the dough into small pieces that can be moulded into a similar shape to a walnut and place on a lightly greased baking sheet
    5. Cook in the center of the pre-heated oven for about 20 minutes
    6. Remove from oven and allow to cool before sifting icing sugar over them until they are completely covered
