Croquette Potatoes (Patatokeftedes)
Serves 8
Description/Notes:
Cheese and potato appetizers (mezdes) that go down well with a glass of ouzo
Ingredients:
2 lbs (1 kilo) potatoes 4 eggs 11 oz. (300 gm) kefalotiri cheese frying oil salt and pepper flour
Cooking Instructions:
- Boil the potatoes, peel them and put through a blender
- Mix the cheese and eggs with the potatoes
- Season to taste with salt and pepper
- Shape the mixture into croquettes and flour them
- Heat the oil in a frying pan and fry the croquettes until lightly browned
