Country Soup (Soupa Horiatiki)
Serves 5-6
Description/Notes:
A nourishing and wholesome Mediterranean soup that, served with fresh crusty bread, is a meal in itself
Ingredients:
3 medium potatoes, diced 3 medium carrots, scraped and diced 3 medium courgettes(zucchinis), diced 3 onions, finely chopped 2 leeks, sliced 3 ripe tomatoes, sliced 8oz. bacon, roughly cut one and a half teacups of olive oil beef stock or a bouillon cube salt and pepper lemon juice
Cooking Instructions:
- Sauté the onions in the olive oil until they become transparent
- Add the vegetables, bacon and beefstock or bouillon cube and season to taste
- Bring to the boil and cook on a medium heat for about an hour
- Serve the soup warm with dashes of lemon juice
