Gazpacho chilled soup
Serves 4
Description/Notes:
A wonderfully light and refreshing chilled soup to start of that special occasion.
Ingredients:
I lb. (450g) tomatoes, washed and roughly sliced 1 small onion, skinned and sliced 1 small green pepper, sliced and with seeds and membrane removed 1 clove of garlic, skinned ad crushed 1 tbsp. olive oil 1 tbsp. wine vinegar 2 tbsps. lemon juice salt and pepper quarter of a cucumber, peeled and diced toasted wholemeal croutons
Cooking Instructions:
- Place the tomatoes, pepper, garlic, onion, vinegar and olive oil in an electric blender and combine well together
- Turn the mixture into a basin and add the lemon juice and season to taste
- Chill in a refrigerator before serving with toasted wholemeal croutons
