Cowboy Casserole
Serves 4
Description/Notes:
Delicious casserole variation on sausages and baked beans
Ingredients:
1 lb. (480g) thin pork or beef sausages 2 medium onions, chopped 4 teaspoons brown sauce 2 teaspoons vegetable oil 24 oz. (720g) baked beans 8 teaspoons flour one and a half pints (900ml) beef stock 4 oz. (125g) raisins salt and pepper
Cooking Instructions:
- Pre-heat oven to 350F, Gas Mark 4, 180C
- Grill the sausages on a rack, turning once, until the fat has stopped dripping
- Place sausages in a large casserole dish
- Heat the oil in a saucepan, add the onions and stir-fry until soft
- Add the flour, stirring occasionally, then add the stock, raisins, salt and pepper and brown sauce
- Bring to the boil , cover and simmer for 15 minutes
- Pour the mixture over the sausages, add the baked beans and cook in the pre-heated oven for 45 minutes
