Stuffed Spud Surprise
Serves 4
Description/Notes:
Tasty variation on the versatile potato
Ingredients:
4 baking potatoes, scrubbed 1 oz. ( 25g ) margarine 1 tablespoon milk salt and ground black pepper 14 oz. ( 415g ) can sausages in brine, drained and sliced 7 oz. ( 175g ) can sweetcorn, drained 1 oz. ( 25g ) cheddar cheese, grated
Cooking Instructions:
- Pre-heat oven to 400F, Gas Mark 6, 200C
- Prick potatoes with a fork and bake in the pre-heated oven for about 1 hour
- When cooked, cool for 5 minutes, then cut in half length ways
- Scoop out center into a bowl and mash in margarine, salt and pepper and milk
- Stir sausages and sweetcorn into mashed potatoes and spoon into skins
- Sprinkle with cheese and return to oven for 20-25 minutes
