Sweetcorn Mustard Pickle
Makes about 1.25 lbs (550g) pickle
Description/Notes:
A quick and colorful microwave recipe for a delicious sweetcorn pickle
Ingredients:
1 onion, chopped 2 teaspoons of mustard powder 1 teaspoon of curry powder half a teaspoon of turmeric half a teaspoon of salt 2 teaspoons of flour 6 oz. (150g) baby sweet corn, cut into half inch (1cm) lengths 2 oz. (50g) thin green beans, cut into half inch (1cm) lengths 1 oz. (25g) gherkins, sliced 1 courgette, diced quarter teaspoon root ginger, grated 3 oz. (75g) granulated sugar few black peppercorns 6 fl oz. (170ml) pickling vinegar
Cooking Instructions:
- Place the onion in a large bowl, cover and cook on Full, 100%, for one minute
- Mix mustard powder, curry powder, turmeric, flour and salt to a paste with two tablespoons of water
- Add to onion with the remaining ingredients and blend well
- Cook on Full, 100%, uncovered for 15 minutes, stirring every 5 minutes until mixture thickens
- Spoon into sterilized , hot jars then seal and label
