Crunchy baked chicken
Serves 2
Description/Notes:
Crunchy, munchy chicken for your outdoor expedition
Ingredients:
2 chicken quarters 2 rounded tablespoons cornflour 1 medium packet potato crisps evaporated milk
Cooking Instructions:
- Pre-heat oven to 350F, Gas Mark 4, 180C
- Rub the chicken quarters all over with salt
- Crush the potato crisps with a rolling pin on a sheet of greaseproof paper
- Dip the chicken quarters in the evaporated milk then coat evenly with the potato crisp crumbs
- Place skin side up on a baking sheet and cook in the pre-heated oven for 40-45 minutes
- Leave on kitchen paper to cool
