Cheese and Tomato Pie
Serves 2-3
Description/Notes:
Wonderful treat for the vegetarians on your picnic outing
Ingredients:
2 Spanish onions, peeled and sliced 4 large tomatoes, peeled and sliced 3 oz. (75g) grated cheese 8 oz. (225g) short crust pastry salt and pepper beaten egg to glaze
Cooking Instructions:
- Pre-heat oven to 400F, Gas Mark 6, 200C
- Line an 8 inch (22 cm.) pie plate with rather more than half the short crust pastry, leaving the rest for the lid
- Place the onions in boiling, salted water and cook until tender then drain well
- Fill the pastry case with layers of onion rings, tomato slices and cheese, seasoning lightly between the layers
- Damp the pastry edges and cover with the lid
- Press the edges of the pastry well together and flute with the finger and thumb
- Glaze with the beaten egg and place in the pre-heated oven for 40-45 minutes
