Ham and Egg Cake
Makes 2-4
Description/Notes:
Enjoy the flavour of ham and eggs as you idly sit and watch the world go by
Ingredients:
4 oz. (125g) minced cooked ham 2 hard boiled eggs 2 oz. (50g) breadcrumbs 2 tablespoons of flour salt and pepper oil for frying 1 egg, beaten 1 teaspooon finely chopped parsley
Cooking Instructions:
- Chop the eggs very finely and mix with the ham, flour and breadcrumbs
- Add the seasoning and parsley, then bind with the beaten egg
- Shape the mixture into flat, round cakes and fry in a little oil until golden brown on both sides
