Recipe: Mandarin creams

Description/Notes:

Choice orange cream dessert with a tropical topping

Ingredients:

  • 1 pint milk
  • 1 medium can mandarin oranges
  • 1 packet lemon flavored cornflour
  • 3-4 tablespoons of sugar
  • kiwi fruit for topping
  • desiccated coconut
  • Cooking Instructions:

    1. Blend the cornflour to a smooth cream with 2-3 tablespoons of milk taken from 1 pint
    2. Bring the remainder of the milk to the boil, pour on to the mixed cornflour, stirring well
    3. Return to the pan, bring back to the boil, allow to boil for 1 minute, stirring all the time
    4. Stir in sugar to taste then allow blancmange to cool
    5. Drain the mandarin oranges, chop roughly, then divide between 4 individual dishes
    6. Fill the dishes with blancmange then sprinkle with desiccated coconut and leave to set
    7. Decorate with a slice of kiwi fruit in the center of each
