Teisen Sir Fon (Anglesey Cake)
Description/Notes:
A simple fruit cake that's a great favorite on the isle of Anglesey.
Ingredients:
8oz self-raising flour 3oz mixed fruit 1 egg pinch salt 3oz butter 3oz sugar 3tbsp milk
Cooking Instructions:
- Cream together the butter and the sugar
- Beat the egg and blend into the butter and sugar mixture
- Add the fruit and enough milk to give a soft dropping consistency
- Place into a greased baking tin
- Pre-heat oven to 375F or gas mark 5
- Cook for 45 minutes
