Mustard Herrings
Serves 4
Description/Notes:
Luscious herrings in a tasty wine and mustard sauce
Ingredients:
4 medium herrings, cleaned, boned 1 small onion, finely chopped 1 x 80g pkt. cider apple stuffing mix 6 tablespoons of hot water three quarters of a pint (425ml) milk one and a half tablespoons of plain flour 1 tablespoon of mustard powder 1 tablespoon of white wine vinegar one and a half ounces (40g) butter salt and ground black pepper sprigs of parsley and lemon slices ,for garnish
Cooking Instructions:
- Place onion in a bowl and cook on full power for one and a half minutes
- Stir in the stuffing and water to bind
- Divide the stuffing between the herrings and arrange in a shallow dish
- Cook on full power for 5-6 minutes, re-arranging half way through cooking
- Set aside, covered
- Pour the milk into a jug, whisk in the flour, mustard, vinegar and seasoning
- Add the butter and cook, uncovered , on full power for 4 minutes, whisking 3 times until thick
- Serve garnished with lemon and parsley and serve sauce separately
