Sweet and Sour Cod
Serves 6
Description/Notes:
Delectable fillet of cod in a sensational sweet and sour sauce
Ingredients:
2 lb. (1kg) cod fillets, skinned and cut into bite sized pieces 8 oz. (225g) shelled prawns 2 onions, sliced 10 fl. oz. (300ml) chicken stock 1 tablespoon tomato puree 3 tablespoons white wine 1 teaspoon of ground ginger 3 oz. (75g) cornflour 3 fl. oz. (75ml) cooking oil 4 celery stalks, sliced 1 red pepper, desseded and sliced 1 tablespoon (15ml) chopped fresh chives salt and pepper 3 fl. oz. (75ml) cooking oil
Cooking Instructions:
- Mix the tomato puree, soy sauce, wine, ginger and half the stock together
- Add the cod pieces and prawns, then marinade at room temperature for 1 hour
- Drain and reserve the marinade
- Roll the cod pieces and prawns in the cornflour, reserving 1 tablespoon of cornflour
- Heat the oil in a frying pan, add the cod and prawns and fry for 8-12 minutes or until fish is cooked and flakes easily
- Transfer to a plate and keep hot
- Add the vegetables, chives and seasoning to the pan and fry for 3 minutes
- Add to the fish
- Mix the remaining cornflour with the remaining stock and add to the pan
- Bring to the boil, stirring constantly
- Gradually stir in the reserved marinade and simmer for 3 minutes
- Stir the fish and vegetables into the sauce and reheat gently
