Apple and Tomato Chutney
Description/Notes:
A nice fruity chutney with a hint of ginger
Ingredients:
1 onion, skinned and finely chopped 1 lb. (450g) sultanas 1 lb. (450g) apples, cut small 1 lb. (450g) tomatoes, skinned and chopped 1 pint (570ml) vinegar half a teaspoon of ground ginger half a teaspoon of pepper 1lb. (450g) Demarara sugar
Cooking Instructions:
- Boil the Demarara sugar in the vinegar until dissolved
- Add the other ingredients and simmer gently for about 1 hour or until mixture is turned to pulp
- Spoon into clean, hot jars then seal and label
