Potato Eggs
Serves 4
Description/Notes:
Great vegetarian variation on the better known Scotch eggs
Ingredients:
4 hard boiled eggs 12 oz. (350g) boiled potatoes 3 oz. (75g) grated cheese 2 eggs, beaten cayenne pepper breadcrumbs flour for coating oil or fat for frying
Cooking Instructions:
- Mash the potatoes and season with salt and cayenne pepper
- Add the cheese and sufficient egg to form a fairly smooth paste
- Shell the hard boiled eggs and coat lightly with flour
- Divide the potato mixture into 4, flatten out each portion on a floured board and mould round the eggs, keeping the original shape
- Coat with the remaining beaten egg, roll in breadcrumbs and fry in deep fat for 5-7 minutes or till golden brown
