Flamenco Flan
Serves 4-6
Description/Notes:
Introduce a taste of Spain with this delectable Mediterranean flan
Ingredients:
6 oz. (175g) plain flour one and a half ounces (40g) lard one and a half ounces (40g) margarine 1 large onion, chopped 1 tablespoon corn oil three and a half ounce (100g) can red peppers, drained 8 oz. (225g) can tomatoes, drained 8 oz. (225g) cooked potatoes, diced 1 tablespoon cooked peas 2 oz. (50g) ham, chopped 2 large eggs quarter pint of milk 1 oz. (25g) Cheddar cheese, grated
Cooking Instructions:
- Pre-heat oven to 425F, Gas Mark 7, 225C
- Put the flour and a pinch of salt in a mixing bowl
- Rub in the lard and margarine, then mix to form a stiff dough with cold water
- Roll out the pastry on a floured surface to a round large enough to fit a 9 inch (23 cm.) flan dish
- Fry the onion in oil until soft.
- Chop the peppers and tomatoes, add to the onion and fry for a further 3 minutes
- Add the potatoes, peas and ham
- Whisk the eggs and milk together, then season with salt and pepper
- Put the onion mixture into the lined flan dish, pour in egg and milk, then sprinkle cheese on top
- Bake in the center of the pre-heated oven for 35-40 minutes
