Banana Trifles
Serves 4-6
Description/Notes:
Tasty end to your perfect picnic lunch
Ingredients:
3-4 bananas juice of half a lemon 2 tablespoons of apricot jam 1 Swiss roll 1 oz. (25g) sugar 3-4 tablespoons of sherry half a pint of custard glace cherries for decorating
Cooking Instructions:
- Cut the Swiss roll into thin slices and place on the bottom of waxed picnic dishes
- Sprinkle each slice with a little sherry and spread with jam
- Peel and mash the bananas and mash with lemon juice and sugar
- Spread a layer over the jam
- Cover with another slice of Swiss roll, top with custard.
- Press down lightly and leave for a while for the sponge to absorb the custard
- When cold decorate with glace cherries
