You'll be keen as mustard on this delicious grilled fish
Ingredients:
2 medium mackerel, cleaned
2 tablespoons of mustard
4 tablespoons of water
1 tablespoon chopped chives
4 tablespoons of wine vinegar
1 tablespoon of oil
parsley to garnish
Cooking Instructions:
Pre-heat the grill to medium hot
Line the grillpan with foil
With a sharp knife, cut the heads off the mackerel and make 3 deep cuts on each side of the fish
Brush the mackerel with oil and place on the grillpan
Place under the pre-heated grill and cook for about 5 minutes
Blend the mustard with a few drops of vinegar then mix with the rest of the vinegar and the water
Turn the mackerel over gently, pour the mustard sauce over it and cook for a further 5 minutes, or until the fish flakes easily, basting occasionally with the mustard sauce as it cooks
Sprinkle with chives and garnish with sprigs of fresh parsley
