Mini Pizzas
Serves 3-6
Description/Notes:
Wholesome mini pizzas that won't break the calorie bank.
Ingredients:
1 onion, chopped 3 oz. (75g) kidney beans, roughly chopped 3 tomatoes, skinned 6 green olives, pitted one and a half ounces (40g) Edam cheese, grated 1 tblsp. olive oil 2 tsp. dried mixed herbs 1 tsp. dried oregano ground black pepper pinch of garlic salt 3 soft wholemeal rolls, halved
Cooking Instructions:
- Fry the onion in the olive oil and add the herbs and garlic salt
- Mix in the tomatoes, olives and beans then cook for about 10 minutes
- Toast the outside of the rolls then spread the mixture evenly between them and season with salt and pepper
- Place on a baking tray, sprinkle with the grated cheese and cook under the grill until golden and bubbling
- Serve as a finger buffet or with a side salad and coleslaw
