Cauliflower Cheese
Serves One
Description/Notes:
Try this tasty, low calorie version of an old favorite.
Ingredients:
Half a cauliflower 5 fl oz. (150 ml) white sauce (see low-calorie white sauce recipe) half a teaspoon of Dijon mustard 1 oz. (25g) Cheddar cheese salt and freshly ground black pepper
Cooking Instructions:
- Prepare the cauliflower, removing outside leaves and thick stalk
- Boil in salted water until tender
- Drain and arrange in a warmed heatproof dish
- Make the sauce, adding the mustard and three quarters of the grated cheese
- Pour the sauce over the cauliflower and sprinkle the remaining cheese on top
- Brown under a hot grill
