Day of the Dead Spicy Beef Tacos

Description/Notes:

No Halloween party is complete without a Mexican Day of the Dead dish so why not spice up your evening with these tasty tacos

Ingredients:

10 taco shells

1 small lettuce

2 firm tomatoes

1lb.(450g) minced beef

1 tsp. plain flour

1 small green pepper

one quarter pint of beef stock

1 medium onion

1-2 tsp chilli powder

pinch of garlic powder

1 tbs. tomato puree

pinch of salt

sour cream for dressing

Cooking Instructions:

Skin and finely chop the onion then mix with the minced beef
Gently fry the beef mixture until browned then stir in the flour and fry about a minute
Stir in the stock, tomato puree and seasonings
Dice and de-seed the green pepper then stir into the beef mixture
Bring to the boil then reduce heat and simmer for about 15 minutes, stirring occasionally
Meanwhile wash and shred the lettuce and dice the tomato finely
Divide the mince mixture between the taco shells, garnish with lettuce and tomato then top with a little sour cream and serve
