Fruity Pancakes
Makes 12 Pancakes
Description/Notes:
A really delicious tea-time treat. Not for the calorie conscious. Sheer Indulgence.
Ingredients:
4oz plain flour 2 level tsp caster sugar pinch of salt 1egg, beaten 1 egg yolk half an ounce of melted butter half a pint of milk Demerara sugar and syrup for topping (For the filling) 4 level tbsp golden syrup (For the filling) 3oz chopped glace cherries (For the filling) 2oz walnuts (For the filling) 2oz sultanas (For the filling) Juice of half a lemon
Cooking Instructions:
- Sift together the flour and salt then add the sugar
- Make a well in the center, add the beaten eggs and mix with a little milk
- Add the rest of the milk, beat well then add the melted butter and beat again
- Mix together the walnuts, glace cherries, syrup and sultanas ready for the filling
- In a 7 inch frying pan make 12 thin pancakes from the batter
- Sprinkle each pancake with a little lemon juice and add a twelfth of the filling and keep hot
- Pack together in a ovenproof dish and glaze the tops with golden syrup and sprinkle with Demerara sugar
- Bake at the top of a moderate oven, 350F, Gas Mark 4 for 10-15 minutes and serve
