Blackberry and Apple Chutney
Makes about 2 lbs. (900g)
Description/Notes:
A microwave recipe for using those blackberries you picked on your day out in the country
Ingredients:
12 oz. (350g) blackberries, hulled quarter pint (140ml) pickling vinegar 1 small onion, chopped 12 oz. (350g) cooking apples, peeled, cored and chopped 4 oz. (100g) raisins half a teaspoon of salt half a teaspoon of cayenne pepper half a teaspoon ground mace 4 oz. (100g) light brown soft sugar
Cooking Instructions:
- Place the blackberries and vinegar in a large bowl
- Cook on Full (100%) for 7 minutes, stirring once
- Sieve to remove pips
- Place onion in a large bowl, cover and cook on Full (100%) for 2 minutes
- Add apple, raisins, salt and spices
- Cover and cook on Full (100%) for 5 minutes
- Add blackberry puree and sugar then cook on Full (100%) uncovered for 16 minutes, stirring every few minutes
- spoon into clean hot jars, seal and label
