Recipe: Blackberry and Apple Chutney

Description/Notes:

A microwave recipe for using those blackberries you picked on your day out in the country

Ingredients:

  • 12 oz. (350g) blackberries, hulled
  • quarter pint (140ml) pickling vinegar
  • 1 small onion, chopped
  • 12 oz. (350g) cooking apples, peeled, cored and chopped
  • 4 oz. (100g) raisins
  • half a teaspoon of salt
  • half a teaspoon of cayenne pepper
  • half a teaspoon ground mace
  • 4 oz. (100g) light brown soft sugar
  • Cooking Instructions:

    1. Place the blackberries and vinegar in a large bowl
    2. Cook on Full (100%) for 7 minutes, stirring once
    3. Sieve to remove pips
    4. Place onion in a large bowl, cover and cook on Full (100%) for 2 minutes
    5. Add apple, raisins, salt and spices
    6. Cover and cook on Full (100%) for 5 minutes
    7. Add blackberry puree and sugar then cook on Full (100%) uncovered for 16 minutes, stirring every few minutes
    8. spoon into clean hot jars, seal and label
