Salmon Pie
Serves 3-4
Description/Notes:
A delicious addition to your picnic hamper that will go down a treat, rain or shine
Ingredients:
8 oz. (225g) can of salmon 8 oz. (225g) flaky pastry 11 oz. (300g) can of condensed mushroom soup salt pinch of cayenne pepper 1 tablespoon of chopped parsley 1 tablespoon of lemon juice beaten egg to glaze
Cooking Instructions:
- Pre-heat oven to 450F, Gas Mark 7
- Line an 8 inch (22cm.) pie plate with rather more than half the pastry rolled thinly
- Flake the salmon, removing any black skin and bones
- Add parsley, salt, lemon juice and cayenne pepper
- Add the mushroom soup and mix well
- Pour the mixture ito the pastry case, damp the edges of the pastry and cover with the remaining pastry
- Press edges together and knock up with the back of a knife
- Brush with the beaten egg score the top and place in the pre-heated oven for35-40 minutes
