Don’t forget to sprinkle caster sugar on these fruity fritters.
- Sieve the flour and salt into a bowl and make a well in the middle
- Mix in the egg yolk, warm water and the oil to form a batter
- Beat until light then stand in a cool place for an hour
- Add the very stiffly beaten white of the egg just before the batter is needed
- Drop each piece of banana in the batter then put into hot fat or oil until lightly browned
- Sprinkle with caster sugar and serve
