Recipe: Banana Fritters

Don’t forget to sprinkle caster sugar on these fruity fritters.


  • Firm bananas , peeled, halved lenghways and halved again across
  • 2 oz. Flour
  • 1 egg
  • one eighth pint warm water
  • 1 dessertsponful salad oil
  • pinch of salt
  • caster sugar
  • oil or fat for frying
  • Cooking Instructions:

    1. Sieve the flour and salt into a bowl and make a well in the middle
    2. Mix in the egg yolk, warm water and the oil to form a batter
    3. Beat until light then stand in a cool place for an hour
    4. Add the very stiffly beaten white of the egg just before the batter is needed
    5. Drop each piece of banana in the batter then put into hot fat or oil until lightly browned
    6. Sprinkle with caster sugar and serve
