Recipe: Banana Fruit Teabread

Description/Notes:

This wonderfully moist teabread is delicious when spread with butter and honey

Ingredients:

  • 2 ripe bananas, peeled and mashed
  • 3 oz. (85g0 walnut pieces, roughly chopped
  • 2 oz. (60g) butter or margarine
  • one and a half teaspoons baking powder
  • grated rind of 1 orange
  • half a teaspoon bicarbonate of soda
  • quarter pint (140 ml) orange juice
  • 1 egg, size 3, beaten
  • 4 oz. (110g) demerara sugar
  • half a teaspoon margarine
  • 8 0z. (225g) white or wholemeal plain flour
  • Cooking Instructions:

    1. Grease and line the base of a 2 lb. (0.9kg) loaf-tin
    2. Pre-heat the oven to 350F, Gas Mark 4, 180C
    3. Sift the flour, baking powder and bicarbonate of soda into a mixing bowl
    4. Rub in the butter and stir in the sugar and orange rind
    5. Add the remaining ingredients and mix well
    6. Spoon the mixture into the loaf tin and level the surface
    7. Bake in the pre-heated oven for one to one and a quarter hours or until well risen and firm to the touch
    8. Turn out onto a wire rack and allow to cool
    9. Wrap and store for at least a day before cutting
