Recipe: Banana Jam

Keep those hungry kids happy with this banana jam in their sandwiches.


  • Two and a quarter pounds (1 Kg.) bananas, peeled
  • 7 oz. (200g) pineapple juice
  • juice of 2 lemons
  • 1 Kg. Bag of sugar with wild pectin
  • Cooking Instructions:

    1. Place half the peeled bananas in a large saucepan and mash roughly with a potato masher
    2. Slice the remaining bananas and add to the pan
    3. Stir in the lemon and pineapple juices
    4. Add the sugar with pectin and heat gently until the sugar dissolves
    5. Bring to the boil for 3-4 minutes then allow to cool a little before pouring into warm, dry jars
    6. Cover and seal when cold
