If you’r nutty about cakes, or Betty, then these almond and hazelnut fancies are definitely for you


  • 6 oz. (150g) castor sugar
  • 2 oz. (50g) ground rice
  • 2 oz. (50g) ground almonds
  • whites of 3 eggs
  • 2 oz. (50g) ground hazlenuts
  • half a teaspoon of baking powder
  • Cooking Instructions:

    1. Pre-heat the oven to 325F, Gas Mark 3, 170C
    2. Beat the white of the eggs till they are stiff
    3. Fold in the remaining ingredients which have been sieved together
    4. Put in a forcing bak with a narrow tube and squeeze out into flat circles on to a greased baking tin
    5. Place in the pre-heated oven and bake for 15-20 minutes
    6. When cool trim with a round cutter, stick two together with butter cream, spread butter cream over the top and coat with finely chopped almonds
