Recipe: Bonfire Fried Chicken

Super sizzling fried chicken coated in breadcrumbs that tastes delicious with a baked potato and corn relish


  • 1 chicken
  • juice of one lemon
  • 1 tbsp. chopped parsley
  • salt and pepper
  • 1 egg
  • 1 cup breadcrumbs
  • 1 tsp. oil
  • 1 tsp. paprika
  • 1 tsp. water
  • oil for frying
  • Cooking Instructions:

    1. Wipe the chicken and cut into joints
    2. Season with salt and pepper and sprinkle with parsley and lemon juice
    3. Leave to marinade for at least 2 hours, turning the joints occasionally
    4. Beat together the egg, oil and water and brush the chicken pieces
    5. Coat the joints with breadcrumbs then stand for 15-20 minutes
    6. Heat the oil to smoking point and cook the chicken joints fro 15 minutes, turning from time to time
    7. If you prefer your chicken joints really well done, heat in a moderate oven for a further 10 minutes
