Recipe: Country Soup (Soupa Horiatiki)

A nourishing and wholesome Mediterranean soup that, served with fresh crusty bread, is a meal in itself


  • 3 medium potatoes, diced
  • 3 medium carrots, scraped and diced
  • 3 medium courgettes(zucchinis), diced
  • 3 onions, finely chopped
  • 2 leeks, sliced
  • 3 ripe tomatoes, sliced
  • 8oz. bacon, roughly cut
  • one and a half teacups of olive oil
  • beef stock or a bouillon cube
  • salt and pepper
  • lemon juice
  • Cooking Instructions:

    1. Sauté the onions in the olive oil until they become transparent
    2. Add the vegetables, bacon and beefstock or bouillon cube and season to taste
    3. Bring to the boil and cook on a medium heat for about an hour
    4. Serve the soup warm with dashes of lemon juice
