Recipe: Cowboy Casserole

Delicious casserole variation on sausages and baked beans


  • 1 lb. (480g) thin pork or beef sausages
  • 2 medium onions, chopped
  • 4 teaspoons brown sauce
  • 2 teaspoons vegetable oil
  • 24 oz. (720g) baked beans
  • 8 teaspoons flour
  • one and a half pints (900ml) beef stock
  • 4 oz. (125g) raisins
  • salt and pepper
  • Cooking Instructions:

    1. Pre-heat oven to 350F, Gas Mark 4, 180C
    2. Grill the sausages on a rack, turning once, until the fat has stopped dripping
    3. Place sausages in a large casserole dish
    4. Heat the oil in a saucepan, add the onions and stir-fry until soft
    5. Add the flour, stirring occasionally, then add the stock, raisins, salt and pepper and brown sauce
    6. Bring to the boil , cover and simmer for 15 minutes
    7. Pour the mixture over the sausages, add the baked beans and cook in the pre-heated oven for 45 minutes
