Recipe: Fruity Egg Curry

Tasty supper or informal party dish that doesn’t cost the earth


  • 6 eggs
  • 1 medium onion, thinly sliced
  • 8 oz. (225g) cooking apple, chopped
  • 1 oz. (25g) sultanas
  • 2 level tbsps. curry powder
  • 2 tbsps. mango chutney
  • 1 tbsp. soft brown sugar
  • 3 tbsps. cooking oil
  • 2 tbsps. lemon juice
  • pinch of salt
  • half a pint of stock
  • Cooking Instructions:

    1. Heat the oil in a pan, add the sliced onion, and simmer very gently for 10-15 minutes with a lid on the pan
    2. Add the chopped apples and continue cooking for another 10 minutes
    3. Add the curry powder, stir, and cook for a further 5 minutes
    4. Add in the rest of the ingredients, apart from eggs, and cook gently with a cover on the pan for 30 minutes, stirring occasionally
    5. In the meantime hard boil the eggs, cut in half and arrange on a bed of boiled rice
    6. Coat the eggs carefully with the curry sauce and serve
