Recipe: Honey Cheesecake

Luscious honey and cinnamon flavoured crunchy cheesecake


  • 8 oz. (225g) wholewheat biscuits, crushed
  • 4 oz. (125g) butter, melted
  • 12 oz. (350g) cottage cheese
  • 1 tsp. (5 ml.) ground allspice
  • 4 oz. (125g) clear honey
  • 2 eggs
  • 2 tsps. ground cinnamon
  • pinch of salt
  • Cooking Instructions:

    1. Pre-heat the oven to 325F, Gas Mark 3, 170C
    2. Grease a 9 inch (23 cm.) flan tin
    3. Mix together the biscuits, butter and allspice
    4. Press the mixture into the bottom and sides of the flan tin
    5. Chill in the refrigerator for 10 minutes
    6. Mix all the remaining ingredients, apart from the cinnamon, together
    7. Spoon the mixture into the biscuit crust and dust with the cinnamon
    8. Put into the pre-heated oven and bake for 40 minutes, or until filling is set
