Recipe: Lamb Curry

Description/Notes:

Tender, lean lamb in a fruity curry sauce that is both delicious and healthy

Ingredients:

  • 1.5lbs. (675g)
  • 1 medium onion, skinned and chopped
  • one half an ounce (13g) curry powder
  • 1 pint of beef stock
  • half an ounce (13g) flour
  • 1 tablespoon of corn oil
  • bouquet garni
  • 1 cooking apple, peeled and chopped
  • salt and pepper
  • Cooking Instructions:

    1. Remove excess fat from lamb and cut into small cubes
    2. Mix the flour, curry powder, salt and pepper together and coat the lamb cubes with the mixture
    3. Heat the corn oil in a heavy based pan, add the onion and meat and fry until meat is browned
    4. Add the stock and bouquet garni and bring to the boil
    5. skim off any excess fat then pour into a casserole, adding the apple and sultanas
    6. Place in a pre heated oven, 350F, Gas Mark 4, 180C and cook for one and a quarter to one and a half hours
    7. Serve with plain boiled rice
