Recipe: Salmon Toasts

Description/Notes:

Succulent salmon in a savoury sauce, topped with cheese and served on toast

Ingredients:

  • 8 oz. (225g) can red salmon
  • 4 thick slices white bread
  • 1 oz. (25g) margarine
  • 1 oz. (25g) plain flour
  • 2 oz. (50g) Cheddar cheese, grated
  • butter
  • quarter pint (150ml) milk
  • salt and pepper
  • Cooking Instructions:

    1. Melt the margarine in a saucepan and stir in the flour
    2. Cook for 1-2 minutes and gradually stir in the milk
    3. Bring to the boil, stirring all the time, then season with salt and pepper to taste
    4. Drain the salmon and remove the skin and bones
    5. Blend the salmon into the white sauce
    6. Toast the bread and spread with butter
    7. Spread the salmon mixture over the toast and sprinkle cheese on top
    8. Cook under a hot grill until the cheese melts and turns a golden brown
